When I was a kid, I couldn’t have imagined using potato flakes for anything, but now, it’s almost like I can’t live without them. Mmmmm…
Quick N’ Easy Potato Soup
2 cups water
2 chicken bouillon cubes
(or just use two cups of chicken broth)
1 Tbsp butter
1 tsp granulated garlic
1 tsp onion powder (NOT salt)
dill to taste
2/3 cups potato flakes (I’m using Idahoan right now)
1/3 cup grated cheese (I’m using Colby/Monterey Jack – Mm-good!)
1/3 cup (or so) milk
Heat up the water and bouillon (or broth), butter, garlic, onion, and dill, stirring a bit, until it comes to a boil. REMOVE FROM HEAT, add the potato flakes, and stir well. Add the cheese, and stir this in until you can see it’s melted most of the way. Continue stirring and add the milk until it reaches a nice smooth consistency.
And – that’s it! Garnish with cheese, dill, or sour cream. You can also add bacon bits, chives, and other things to create a “baked potato soup”.
This recipe serves two, but can easily be scaled for just about any number. Beware – it is FILLING!
